Hi All,

I've mentioned to just about everyone that Kay from SA is coming up to visit family, and will most likely come by and see us at History Alive. But she's also keen to catch up with us all, and she's offered to bring along some show-and-tell type items from her collection.

So, I'm putting on Dinner! I figure if you want to arrive sometime after 6.30pm, I'll be home and hopefully cooking by then.. wink.gif. I think you all know where I live by now.. haha....

I thought I would make beef and guiness pie, it seemed to go down a treat at the Cutural Dinner. If you can't eat basically a beef stew with potatos, please let me know and I'll think of something else.

Numbers would be good though, so I know how many places to set at the table.. wink.gif... And if you want to bring something, there's still breadrolls and maybe some desert? Again, post your preference..

I would also rely like to attend. though I am not sure If I will be able to drive my self, due to the fact that I had surgery a week and a half ago. If someone could offer me a lift or I will make a post on the day to let you know if I feel that i am up for the drive

I can make it to brisbane. just give me a time and location and I can be there. not sure what you ment by "I am no driving back to Ipswich" is that a yes I am dring back to ipswich or a your are not driving back to ippy.

If you can be in Brisbane by 4.30pm that would be good! Then I will drive Cherie and you to Cherie's.

I am not driving back to Ipswich tonight though, otherwise I would have to drive in again tomorrow night for dinner plans. We can drop you at the train station for the ride home?

It's a very scientific recipe!

about a kg of beef (I use rump!)
can of guiness
beef stock
mixed herbs - rosemary, thyme, bay leaves, garlic, salt and pepper to taste
flour to thicken with a little gravy mix
2 medium sized onions
2-3 carrots (depeding on size)

I brown my beef, then put it in my slow cooker with the roughly chopped onions and carrots and herbs then let it cook slowly... Basically there needs to be enough liquid to cover the meat and vegetables well. About halfway through (usually let it cook for about 4 hours on a setting of "2" - there's only 3 settings on my slowcooker) I stir in some gravy mix and the flour to thicken the sauce (something I didn't do last night - so you can go without!) then let it cook some more.

The other bits was mashed potato - however you like to make it!
The puff pastry I just cut up in squares and egg wash before puffing them in the oven on a medium heat. They should only take a couple of minutes ideally.

I also serve with peas! You can put the peas into the stew too, but I prefer them on the side personally.
